I came home on Wednesday night in a hurry from the gym. Dished needed to be done, cleaning around my apartment, etc the list could go on forever.
So I decided to use my time wisely and multitask while cooking.
I recently purchased eggplant, so here was the menu. Sauteed onion with fresh eggplant and diced tomatoes (with a little chicken broth to help soften the eggplant)! Yum!
I added in a little corn to add that crunchy and sweet flavoring! I always am impressed with myself when I get to try cooking with vegetables that I normally don't use!
I laid it over sauteed chicken, in a little chicken broth and tomatoes also.
Cook on!
