Multitasking with slow cooking food

I came home on Wednesday night in a hurry from the gym. Dished needed to be done, cleaning around my apartment, etc the list could go on forever. 
So I decided to use my time wisely and multitask while cooking. 
I recently purchased eggplant, so here was the menu. Sauteed onion with fresh eggplant and diced tomatoes (with a little chicken broth to help soften the eggplant)! Yum!


I added in a little corn to add that crunchy and sweet flavoring! I always am impressed with myself when I get to try cooking with vegetables that I normally don't use!
I laid it over sauteed chicken, in a little chicken broth and tomatoes also.

Love Fresh Chives

Last night was one of my first sit down meals in a while.. I think I'm working too much. Oh well.
Had lightly breaded pork chops with pearl couscous and sauteed swiss chard with onions. 
DELICIOUS! 



Topped with fresh chives that I keep handy on the shelf in water so they continue to grow! Always adds a nice addition to a meal!
