First Blog..

Okay, I'm starting my journey into the Blogging world, again, but merely for my new adventure in cooking my way through a new life.

It all started with my trainer, John. Probably one of the nicest guys to work with. He's not that mean type to yell at me. But deep down I would never want to disappoint him through this challenge. Being honest was our first step.  Learning lots of different things.

Calorie counting, hours at the gym, cutting out cheese, the drama of trying to figure out the right diet for.. me. This has been my new battle while trying to cook fresh healthy meals for myself. Not that I ate horrible before, but more of watching what I was consuming.

Fish. Never cooked it for myself at home. I've always been afraid that I would be that neighbor to stink up the house.. But it's not bad at all. (You know that person in the office that reheats the fish meal.. hate those people). Wow, this is really good. So I kept trying different fishes, some that weren't as good. But a new different adventure to try. From trying to use in the oven for slowly heat on a pan.

My normal meals were usually a form of chicken with vegetables and a grain. But venturing out to different stuff was becoming fun! Barely, I never would have thought to want to try to cook it. Amazing! Yes, tastes in between couscous and rice! Takes forever to cook, a whole 50 minutes, but it's worth it! Mixed with lime juice, cilantro, garlic pureed together, a perfect blend!

Couscous and quinoa are new fun grains to reach out to that I have enjoyed. A nice quinoa salad is very easy to mix together adding some balsamic glaze fresh vegetables and a protein! I feel that I want to overall cut out all white pure grains like pasta, white rice, etc. We shall see how this pans out..

Vegetables! Usually one of my favorite things about a meal. Sauteed spinach, wilted bok choy, swiss chard. Just a few of foods that I love to easily make for a side dish. Also great for a small snack between meals, raw green peppers with a red pepper hummus (high in calories for hummus yes but it's worth it).

Having the nuts in between meals is great to an empty stomach filler up. And fresh fruits, which still contain carb's it's a healthier carb. So I am going to prefer to fill up my carbs in fresh mango, banana or whatever I want!

Lets see how this goes!

  1. Nice going Erica. Can't wait for the next one. When you get a chance read my daughter's blog. She is perfection. And always thinks about the diet for the most part unless she does a dessert.
    She also purchased a nice camera and has been taking lessons. I think you will enjoy it. Let me know.
